Thanksgiving for 2

Thanksgiving is all about the massive quantity of food and when there are 8 people at the table it is ok to have 5 starches, 4 vegetables and 2 proteins and round out the meal with an assortment of sweets and pies.

But when there are just 2 of you how do you slim down the meal without making it another dinner?

Stuffing with Sausage + Apple
Mixed Nut Pie with Ice Cream

Your curate your meal to your favorite things, the things that remind you how to be thankful and grateful this season, without waste. I must have Cranberry Sauce, and it is so easy to make and it tastes phenomenal and makes the house smell amazing. For Travis it’s Stuffing with Apple and Sausage, just like his dad makes. We both love pecan pie and this year we are making a roasted mixed nut pie; almonds, walnuts and pecans perfect for diversity and something new to try! Who knows it may become a Clarke Tradition!

Past Thanksgivings we have done the Thanksgiving celebration at our church which only required a dish to bring and share. Or we have had family and friends celebrating and helping us cook and eat!


Lastly, here is what I am thankful for.

Husband, thank you for supporting me. It’s not easy I know and I remember the frustration I used to feel after a full day of work outside the home to come home and see your spouse in the same clothes they woke up in. It is hard to fathom that I do indeed work, but you know I do and you support me as I continue to grow and become better at what I do, as well as care for our home which I take huge pride in.

I am so thankful to have accomplished my new years resolutions:

  1. Get a fulfilling creative job
  2. Run a Half Marathon
  3. Travel

There is a 4th one but I won’t accomplish that for another month.

I am thankful for my friends who have been so blessed this year, with new jobs, babies, and overcoming all obstacles in their way. Congratulations Ashley & Nathan, Rachael & Nate, Kendra, Stacie & family!

I am thankful to have the ability to love those around me, it sounds prideful but I am thankful for the ability to see past what the world says I should see and love people for who they are because God made them and loves them.

Be thankful today for all you have and have overcome. And share opportunities to others to help them overcome their burdens and challenges and in doing so be Christ not by preaching but by living the gospel.
